Ingredients:
- 1 lb. ground chicken
- 1/2 cup breadcrumbs
- 2 tbsp chopped onion
- 1 tbsp chopped parsley
- 1/2 cup Parmesan cheese
- S & P to taste
- 1 clove garlic, minced
- 1 egg, whisked
Directions
- Preheat oven to 400°F.
- In a large bowl, using your hands, gently mix together ALL ingredients .
- Shape the meatballs - little smaller than golf balls on a foil-lined baking sheet. Note I suggest spraying the sheets with some Pam to help when you want to turn them over while cooking!
- Brush some EVOO over the top of the meatballs before putting into the oven.
- Cook for about 8-10 minutes, flip over (move around) and then cook form 8-10 more minutes.
- let cool & then you can add to the red sauce (so it gets some of the flavor) or you can add to pasta & sauce when serving!
